The farm La Timpa was officially founded in 2015 after a long process of restoration and logistic planning of a splendid plot of land situated in the lovable carob valley, it is a scenic route in the Iblei area, in the province of Ragusa. La Timpa produces some of the most sought-after certified organic agricultural products such as saffron, the iblei extra virgin oil and many other products such as carobs and the great variety of aromatic plants.

The company, primarily agricultural, was simultaneously flanked by handcrafted and manufacturing activities for the restoration of the historic watermill characterized by grinding stone along Santa Domenica stream in the same valley.

The mill, family-owned for 15 years, fully restored and functional, turns its activities into milling Sicilian ancient grains, organically grown, producing whole wheat flour with wheat germ, ideal to make brad and typical products of Ragusa. Thanks to its recovery it was possible to reactivate and make functioning the structure in its original end-use of “Watermill” in accordance with its craft and manufacturing prerogatives and especially with the prerogative of using the traditional grinding wheat process that is exclusively originated from organic cultivation for the production of wholewheat flour in order to be used in typical Ragusans products preparation.

Pasta is the basis for the Mediterranean diet and, when eaten in the right measure, especially if it is whole grain pasta, and from ancient Sicilian grains, provides the proper nutritional intake in terms of carbohydrates (less represented in respect to traditional pasta) and is rich in protein and fiber which give a high sense of being full and is highly digestible. Extruded through bronze moulds and dried slowly they preserve all the flavour and important properties of stone ground whole grain flour. They are course and porous, with their unmistakable sweet to the taste flavour they are well suited to every type of simple and uncomplicated condiment.

The graphic system becomes a clear expression of the farm project that makes respect for the environment, the recovery of tradition, the pursuit of excellence, its ideological as well as productive manifesto. The past and the present are combined in the choice of topographies with robust features such as olive trunks, in the choice of the color that reminds the plowed land ready for sowing, in the illustrations that seem drawn from ancient manuals of agriculture, in compositions ordered as a field cultivated without giving anything superfluous.
