They originate from microclimates and are produced in a microvinification plant. They are not microbes, but Micro Wines, a series of monovarietal wines made from autochthonous grape varieties grown in vineyards with unique characteristics. They are produced in small volumes in carefully controlled conditions, like Micro Red (Sn), the result of working 9 separate plots of red Carignan, or Micro White(Cn), which recovers a minority autochthonous variety. The bottles, with a highly technical language and often not very glamorous, reflect the importance of the laboratory tasks that form part of the winemaking process.
