Vinegar; It is an aromatic product obtained by fermentation of wet or dried fruits containing sugar, ethyl alcohol and acetic acid.

According to the Turkish Standards Institute, the definition of vinegar has been defined as “a unique product produced from biological liquids or other substances by biological two-stage alcohol and acetic acid fermentation”.

Two-stage fermentation takes place during vinegar production. The first of these is ethyl alcohol fermentation, the anaerobic (oxygen-free) yeast pathway that breaks down the sugar in the body with ethyl alcohol (ethanol), the ethyl alcohol produced in the second stage is oxidized to acetic acid by aerobic (oxygenated) conditions by vinegar bacteria in the fruit.

As a result of biochemical processes, by converting ethyl alcohol (ethanol) to acetic acid, all the drunk and negative effects of ethyl alcohol are eliminated, and vinegar, a nutritious, useful and aromatic food, is produced.
