No preservatives. No artificial flavorings. No sugar or MSG. Just fresh fish from the sea and coarse salt – the simplest of ingredients, combined using knowledge refined over hundreds of years.
In Giang Tay, each jar of fish sauce is fermented using the traditional chợp method, following the golden ratio of 70 parts fish to 30 parts salt. Craftsmen carefully layer fish and salt, one layer at a time, then seal the jars with leaves – letting time do the rest.
