Sweet botifarra sausage is a peculiar traditional product, halfway between candy and cured meat. The name ‘Dulses’, as our grandparents used to call these treats for people with a sweet tooth, and the sugar-sweet appearance give us a well-humoured clue to the essence of this product from the Empordà region.
